Ingredients
Dough
250ml tepid water
56g/2oz melted butter
56g/20z granulated sugar
1 large egg, beaten ½ teaspoon table salt
500g/1lb 2oz strong white bread flour
2 teaspoons fast action yeast
1 teaspoon ground cinnamon
¼ teaspoon freshly grated nutmeg
110g/4oz raisins
40g/1½oz sultanas
Preparation
extra flour for rolling out (ordinary plain flour will do)
1 large egg for glazing
Method
- Place all the dough ingredients in your breadmaker in the order shown.
- Run the breadmaker’s dough programme.
- Grease a baking tray.
- Remove the dough from the breadmaker, cut it into 12 equal pieces and shape them into buns.
- Put the buns on the baking tray and cut crosses into each one.
- Cover with a tea towel and leave to rise for half an hour.
- While the bun’s are rising, preheat the oven to 170°C (fan) or 190°C (conventional).
- Brush beaten egg over the top of each bun, avoiding the cross area
- Bake in the oven for approximately 12 minutes
