Ingredients

8oz/250g self-raising flour
½ teaspoon salt
1½ oz/40g butter
1 level tablespoon granulated sugar
2 heaped tablespoons sultanas
1 large egg
A small amount of milk

1 baking tray, lightly greased

Method

  1. Preheat the oven to 200 degrees C.
  2. Mix the flour and salt together in a basin.
  3. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.
  4. Mix in the sugar and sultanas.
  5. Beat the egg in a separate cup or small bowl. Save one tablespoon of it for glazing the tops of the scones.
  6. Make a hole in the mixture and tip the egg into it.
  7. Using a knife bring the mixture together into a soft dough. You’ll probably need the milk too. Try not to overwork it.
  8. Roll out the mixture till it’s about half an inch (1.3cm) thick, and cut out using a scone cutter
  9. Place on a greased baking sheet and brush with the reserved beaten egg.
  10. Bake in the oven for 10 minutes, then leave to cool.
