makes 12 muffin-sized cakes

Ingredients

125g butter
125g caster sugar
2 large eggs
175g self-raising flour
100g sultanas
1 x 400g tin of pineapple chunks, drained

12 muffin cake papers

Method

  1. Preheat the oven to gas mark 4, electric 180ºC/375ºF, fan oven 170ºC
  2. Put the muffin papers into a muffin tin.
  3. Cream together the butter and sugar
  4. Beat the eggs into the butter and sugar mixture, one at a time.
  5. Fold in the flour.
  6. Stir in the sultanas, then the pineapple.
  7. Spoon the mixture into the papers (approximately 1 heaped tablespoon per paper).
  8. Cook in the middle of the oven for 15 minutes.
