makes 12 muffin-sized cakes
Ingredients
125g butter
125g caster sugar
2 large eggs
175g self-raising flour
100g sultanas
1 x 400g tin of pineapple chunks, drained
12 muffin cake papers
Method
- Preheat the oven to gas mark 4, electric 180ºC/375ºF, fan oven 170ºC
- Put the muffin papers into a muffin tin.
- Cream together the butter and sugar
- Beat the eggs into the butter and sugar mixture, one at a time.
- Fold in the flour.
- Stir in the sultanas, then the pineapple.
- Spoon the mixture into the papers (approximately 1 heaped tablespoon per paper).
- Cook in the middle of the oven for 15 minutes.
