Quick comfort food using ingredients that we’ve usually got to hand already.

Ingredients
for the filling
4 medium size eating apples
1oz/28g Demerara sugar
4oz/110g raspberries (defrosted if frozen)
for the crumble
3oz/85g chilled butter cut into small chunks
6oz/170g self-raising flour
1 heaped teaspoon ground cinnamon
4oz/110g Demerara sugar
Equipment: Baking dish, approximately 8 inches by 11 inches by 2 inches deep
Method
- Preheat the oven to 180°C (fan oven) or 200°C (conventional oven).
- Peel the apples, quarter them, remove the cores, then cut into thin slices and place in the baking dish with the raspberries.
- Sprinkle the fruit with the sugar and stir till the ingredients are well mixed.
- Now make the crumble by mixing the flour and cinnamon together, then rubbing the butter into this mixture until it resembles breadcrumbs. Stir in the sugar.
- Spoon the crumble mixture onto the fruit, pressing it down with the back of the spoon.
- Bake in the over for 25 minutes (fan oven) or 30 minutes (conventional oven).
- Serve with custard!
