Ingredients
2 heaped tablespoons strawberry jam
120g butter
120g caster sugar
2 large eggs
120g self raising flour
Method
- Grease a 1 pint pudding basin with butter.
- Using a mixer, beat the butter and sugar together until light and fluffy.
- Add one of the eggs and a tablespoonful of the self raising flour (to stop the mixture curdling), then beat again.
- Add the second egg and beat again until well mixed.
- Add the rest of the flour, and beat again until well mixed (2 to 3 minutes).
- Pour the sponge mixture into the pudding basin and cover it loosely with cling film.
- Microwave in a 900W microwave on full power for 2 minutes 30 seconds.
- Use a skewer to check that it’s cooked all the way through – it should come out clean when you insert it into the middle of the pudding.
- Serve with custard.
