Serves 2 or 3

Ingredients

2 heaped tablespoons strawberry jam

120g butter

120g caster sugar

2 large eggs

120g self raising flour

Method

  1. Grease a 1 pint pudding basin with butter.
  2. Using a mixer, beat the butter and sugar together until light and fluffy.
  3. Add one of the eggs and a tablespoonful of the self raising flour (to stop the mixture curdling), then beat again.
  4. Add the second egg and beat again until well mixed.
  5. Add the rest of the flour, and beat again until well mixed (2 to 3 minutes).
  6. Pour the sponge mixture into the pudding basin and cover it loosely with cling film.
  7. Microwave in a 900W microwave on full power for 2 minutes 30 seconds.
  8. Use a skewer to check that it’s cooked all the way through – it should come out clean when you insert it into the middle of the pudding.
  9. Serve with custard.
