Ingredients

250g button mushrooms
3 cloves garlic, crushed
1 tablespoon olive oil
½ glass white wine
2 heaped teaspoons chopped parsley
2 tablespoons double cream
2 x 2cm thick slices granary bread
2 heaped tablespoons grated mature cheddar

Method

  1. Saute the mushrooms and garlic until the mushrooms are golden brown.
  2. Add the wine and cook over a high heat until reduced by half.
  3. Meanwhile toast the bread on one side.
  4. Add the cream and parsley to the mushroom mixture and warm through over a low heat for approximately 2 minutes.
  5. Turn the bread over so its untoasted side is uppermost.
  6. Divide the mushroom mixture equally between the two slices.
  7. Top the mushrooms with the grated cheese.
  8. Place back under the grill until the cheese has melted.
  9. Serve with a side salad.
