Ingredients
250g button mushrooms
3 cloves garlic, crushed
1 tablespoon olive oil
½ glass white wine
2 heaped teaspoons chopped parsley
2 tablespoons double cream
2 x 2cm thick slices granary bread
2 heaped tablespoons grated mature cheddar
Method
- Saute the mushrooms and garlic until the mushrooms are golden brown.
- Add the wine and cook over a high heat until reduced by half.
- Meanwhile toast the bread on one side.
- Add the cream and parsley to the mushroom mixture and warm through over a low heat for approximately 2 minutes.
- Turn the bread over so its untoasted side is uppermost.
- Divide the mushroom mixture equally between the two slices.
- Top the mushrooms with the grated cheese.
- Place back under the grill until the cheese has melted.
- Serve with a side salad.
