Ingredients

4 salmon fillets
2 slices malted bread
4 heaped tablespoons coarsely grated parmesan
2 teaspoons chopped basil
1 teaspoon water

Method

  1. Pre-heat the oven to 180°C
  2. Cut the crusts off the bread, break into chunks and whizz into coarse breadcrumbs in a small food processor.
  3. Add the parmesan, basil and water to the breadcrumbs and process them all until the mixture starts to clump together.
  4. Arrange the salmon fillets on a baking tray.
  5. Spread the breadcrumb mixture on the top of each salmon fillet.
  6. Bake in the oven until the salmon is cooked and the breadcrumb topping is starting to turn golden brown at the edges (approximately 10 minutes in a fan oven).
