Ingredients
4 salmon fillets
2 slices malted bread
4 heaped tablespoons coarsely grated parmesan
2 teaspoons chopped basil
1 teaspoon water
Method
- Pre-heat the oven to 180°C
- Cut the crusts off the bread, break into chunks and whizz into coarse breadcrumbs in a small food processor.
- Add the parmesan, basil and water to the breadcrumbs and process them all until the mixture starts to clump together.
- Arrange the salmon fillets on a baking tray.
- Spread the breadcrumb mixture on the top of each salmon fillet.
- Bake in the oven until the salmon is cooked and the breadcrumb topping is starting to turn golden brown at the edges (approximately 10 minutes in a fan oven).
