Ingredients
1 kg baby new potatoes
2 tablespoons olive oil
2 garlic cloves
1 tablespoon coarse salt
small handful of chives
Method
- Preheat your oven to 180 degrees C
- Wash the potatoes. If they’re bigger than approximately 2.5cm long, cut them in half. Put them in a large bowl.
- Drizzle the olive oil over the potatoes, sprinkle with the salt then crush the garlic into the bowl.
- Use scissors to cut up the chives into small pieces and add them to the bowl.
- Stir the contents of the bowl. If you’ve got time, leave it to stand for 30 mins or more to allow the garlic flavour to infuse the oil
- Pour the contents of the bowl on to a baking tray and bake in the oven for 25 minutes.
