Ingredients

1 kg baby new potatoes

2 tablespoons olive oil

2 garlic cloves

1 tablespoon coarse salt

small handful of chives

Method

  1. Preheat your oven to 180 degrees C
  2. Wash the potatoes. If they’re bigger than approximately 2.5cm long, cut them in half. Put them in a large bowl.
  3. Drizzle the olive oil over the potatoes, sprinkle with the salt then crush the garlic into the bowl.
  4. Use scissors to cut up the chives into small pieces and add them to the bowl.
  5. Stir the contents of the bowl. If you’ve got time, leave it to stand for 30 mins or more to allow the garlic flavour to infuse the oil
  6. Pour the contents of the bowl on to a baking tray and bake in the oven for 25 minutes.
