Ingredients
225g raw shelled prawns
1 medium egg white
2 tablespoons cornflour
freshly ground pepper
a pinch of salt
4 teaspoons sesame seeds
4 slices of thick sliced white bread
sunflower oil for frying
Method
- Put the prawns, egg white, cornflour and seasoning in a food processor and whizz to form a coarse paste.
- Put the paste in the fridge for at least 15 minutes to chill.
When you’re ready to cook the prawn toast: - Spread a quarter of the paste evenly on one side of a slice of bread. Sprinkle one teaspoon of sesame seeds on to the paste, press the seeds into the paste lightly, then shake off any loose seeds.
- Repeat the above procedure with the other 3 slices of bread.
- Fry the prawn toasts in the oil, prawn side down first until the paste and the seeds start to turn golden (approx 2 minutes).
- Turn the bread over and fry the other side till it’s golden brown (about 1 to 2 minutes)
- Remove from the frying pan and drain on a sheet of kitchen roll.
- Cut each slice into 4 pieces and serve.
