Ingredients

225g raw shelled prawns
1 medium egg white
2 tablespoons cornflour
freshly ground pepper
a pinch of salt
4 teaspoons sesame seeds
4 slices of thick sliced white bread

sunflower oil for frying

Method

  1. Put the prawns, egg white, cornflour and seasoning in a food processor and whizz to form a coarse paste.
  2. Put the paste in the fridge for at least 15 minutes to chill.
    When you’re ready to cook the prawn toast:
  3. Spread a quarter of the paste evenly on one side of a slice of bread. Sprinkle one teaspoon of sesame seeds on to the paste, press the seeds into the paste lightly, then shake off any loose seeds.
  4. Repeat the above procedure with the other 3 slices of bread.
  5. Fry the prawn toasts in the oil, prawn side down first until the paste and the seeds start to turn golden (approx 2 minutes).
  6. Turn the bread over and fry the other side till it’s golden brown (about 1 to 2 minutes)
  7. Remove from the frying pan and drain on a sheet of kitchen roll.
  8. Cut each slice into 4 pieces and serve.
